THE PARSLEY PREDICAMENT
Being rich in parsley and other herbs is common for our Personal Farmer Membership clients. We often get asked, "What do I do with all this [insert abundant herb]?" It's a delicious "problem" to have!
Our go-to solution for abundant herbs? Whip up a quick Chimichurri or Pesto, of course! Over the years, we've learned to adapt the classic chimichurri or pesto recipe to the garden's seasonal bounty. Find some customizable herby recipes below!
GARDEN-TO-TABLE CHIMICHURRI
INGREDIENTS
1 cup fresh herbs (parsley, cilantro, oregano, mint, or a mix!)
3-4 cloves garlic, minced
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar (or lemon juice)
1/2 teaspoon red pepper flakes or a fresh jalapeño from the garden (optional)
Salt and pepper to taste
INSTRUCTIONS
Finely chop your chosen herbs.
Combine all ingredients in a bowl and mix well.
Adjust seasonings to your preference.
TRY CHIMICHURRI:
• drizzled over grilled meats or vegetables
• as a marinade
• serve with crusty bread
• add to grain bowls
Pesto Power
INGREDIENTS
2 cups fresh herbs (basil, parsley, arugula, or a mix)
1/2 cup toasted nuts (pine nuts, walnuts, or almonds)
1/2 cup grated Parmesan cheese (optional)
2-4 cloves garlic
1/2 cup extra virgin olive oil
Salt and pepper to taste
INSTRUCTIONS
Combine herbs, nuts, cheese (if using), and garlic in a food processor or blender.
Pulse until finely chopped.
With the motor running, slowly drizzle in olive oil until a smooth paste forms.
Season with salt and pepper to taste.
TRY PESTO:
• tossed into pasta
• as a pizza sauce
• spread on crostini for an appetizer
• dollop on tomato caprese salad
Herby Salad Dressing
INGREDIENTS
1/2 cup fresh herbs (any combination), finely chopped.
1/2 cup extra virgin olive oil.
1/4 cup vinegar (red wine, apple cider, or balsamic)
1-2 cloves garlic minced (optional)
1 teaspoon Dijon mustard (optional, but helps to emulsify)
salt and pepper to taste.
INSTRUCTIONS
Combine all ingredients in a jar with a tight-fitting lid.
Shake vigorously until well emulsified.
Adjust seasonings to your liking.
TRY THIS HERBY DRESSING:
• as a salad dressing
• drizzled on a sandwich
• over a grain bowl
• serve with crusty bread
